This patent application describes a method for preparing dry reaction flavor compositions that retains their authentic taste. Also disclosed are flavor compositions prepared by this method and products containing them.

Specifically, the steps include: a) providing a reaction flavor mixture containing 40% to 75% flavor and 25% to 60% water; b) drying the mixture in a thin-film evaporator under a vacuum of 75-180 mmHg at a film temperature of 70-95°C to obtain a molten reaction flavor having less than 10% water; and c) cooling the molten reaction flavor to obtain the reaction flavor composition as a solid.
