Symrise’s Filbertone (FEMA# 3761; CAS# 409-02-9 and 81925-81-7; C8H14O) is a nature identical flavoring substance occurring naturally in roasted filberts (hazelnuts). This clear, colorless to yellowish liquid possesses a nut, hazelnut taste profile and a roasty, fatty, sweet and long-lasting character. It is recommended for hazelnut and brown flavors at a use level of 10 ppb–50 ppm to add body and long-lastingness to brown flavors, and richness to fruit flavors (especially exotic fruit flavors.)
