Natural Advantage introduces U.S., E.U. and worldwide kosher, non-GMO and vegetarian cucumber alcohol, natural, (FEMA# 3379), also known as trans-2-nonenol. Cucumber alcohol occurs naturally in cucumber, asparagus, melon, passion fruit and nectarine. Its taste and odor are green, fatty and melon with the white, fleshy nuance of cucumber. The ingredient is used in cucumber, meat, fruit and tropical fruit flavors. It can be used for consumption at levels of 0.005-0.15 ppm.

Additionally, the company offers U.S., E.U. and worldwide bacon dithiazine, natural, (FEMA# 4017, JECFA# 1048, CAS# 74595-94-1), which is also kosher, non-GMO and vegetarian. The flavor ingredient is used in vegetarian products to achieve crispy bacon, chicken, beef, potato skin and other similar flavors. Bacon dithiazine has a fried or roasted taste reminiscent of crispy chicken, beef or pork fat. Its use levels are at 0.5 ppm to 2.5 ppm in consumer products.

Sigma Aldrich has launched heptyl alcohol, natural, 98% (FEMA# 2548, CAS# 111-70-6). The taste characteristics of this kosher ingredient include waxy green richness with a mouthfeel reminiscent of fresh apple and unripe banana with green vegetative nuances, in addition to underlying creamy dairy nuances. Its use levels are at 2 ppm to 5 ppm and at the higher levels, its vegetative green waxy nuances are exhibited. Odor attributes are similar at 1% EtOH, displaying fruity nuances reminiscent of cucumber and melons such as watermelon, honeydew and cantaloupe. The ingredient is applicable to a range of fruit, vegetative and dairy applications, in addition to green pepper and jalapeño. It is also applicable to green notes for herbal salad dressings, and in butter and cheese flavors.

Additionally, the company has introduced trans-2-hexen-1-ol, natural, 97%, FG (FEMA# 2562, CAS# 928-95-0), which is also a kosher ingredient. From 5 ppm to 10 ppm, its taste characteristics are green leafy, fresh and grassy with fruity nuances of ripe apple and green banana. At 2 ppm, its taste attributes are fresh green and vegetative with fruity nuances of apple, guava and kiwi. At 1% EtOH, the odor characteristics are fresh green, fatty, fruity apple, pear and guava with vegetative and herbal nuances. This material can be applied in apple, kiwi, guava, mango and strawberry, as well as unripe banana, ripe apples, pears and pineapple. It can also be used to freshen and enhance vegetative notes for green pea and fresh snap beans.
