Myrtenyl Acetate

Symrise’s myrtenyl acetate ((1S)-(6,6-dimethylbicyclo[3.1.1.]hept-2-en-2-yl)methyl acetate; C12H18O2; FEMA# 3765, CAS# 1079-01-2) naturally occurs in buchu and peppermint. It has a floral, violetlike, fruity profile with herbal nuances, and it is useful in raspberry and other red fruit flavors, as well as in mint and citrus flavors at a recommended use level in food of 100 ppb–50 ppm.
