Where’s the Beef? In Symrise’s Discover Beef Line

Symrise Flavor has launched its Discover Beef line of flavors, available for a variety of savory application.

Profiles include marrowbone, boiled, seared, roasted, grilled, pan dripping, braised, pot roast, broiled and smoke beef flavors, making them ideal for products including soups, gravy, dressings and RTE meals.

After conducting an overview of the consumer expectations of beef tastes, the company used its Symscript global language to describe taste differences by region. They then worked with the U.S. Beef Council and the Symrise Chefs United program to gather input from 30,000 professional chefs from around the world, and the Symrise Marketing and Consumer Insights Group offered a culinary tour of New York City restaurants featuring beef on their menus.

The range was produced through new sulfur chemistry reaction methods and more authentic starting materials, at a 40% cost-in-use reduction.
