LycoRed's SANTE Could Lower Sodium Content in Packaged Soups

After six months of research with its tomato-derived salt product, SANTE, LycoRed has adapted the formulation for use in powdered and canned soup. Roee Nir, the company's color and flavor global commercial manager, says that using .5% SANTE can reduce sodium content by up to 30%, with no notable tomato flavor or loss of taste.

In addition to the umami characteristics found in tomatoes, SANTE also has kokumi attributes. Kokumi can enhance the initial flavor, balance the flavor profile and extend the sensation of those tastes. 

The company has both powder and liquid formulations and is stable at high temperatures and variable pH.
