Possible applications: All cinnamon flavors will benefit from this essential oil either as a stand-alone or as part of a sweet spice blends for chai, pumpkin pie, gingerbread, cola, mulled cider, etc.

Timur Pepper Oil

Odor: @ 100%. Citruslike, grapefruitlike, tropical and terpeney.

Taste: @ 5 ppm. Sweet, citruslike, slightly woody and grapefruitlike with a tingle.

Taste: @ 10 ppm. Sweet, tropical, citruslike and grapefruitlike with a slight burn.

Possible applications: The unusual citrus and trigeminal notes of this pepper oil can give citrus flavors like orange, mandarin, bergamot, grapefruit and lemon a novel twist. It will also enhance tropical notes in pineapple, kiwi, guava, passion fruit and the like.

Possible applications: Although it will never play a leading role, this ester will nonetheless add body to fruit flavors like pineapple, apple and papaya and cheese flavors, especially goat and sheep’s milk types like chevre and manchego.

Possible applications: Citrus flavors, especially bergamot, orange and tangerine, will be enlivened with this essential oil. Other flavors where a touch will lend depth are in dark berries like grape and blueberry, orange blossom plum and red wine.

Black Ceylon Tea Pure Jungle Essencea

Odor: @ 100%. Sweet, floral, fruity, prunelike, tea and rich with a whiff of the barnyard.

Taste: @ 0.04%. Cold brewed black tea and slightly astringent.

Possible applications: This highly characteristic extract is almost too good for anything less than tea flavors. But it could also be used in brown fruits like prune, raisin and tamarind and herbal flavors.

Possible applications: This distillate will add true, fresh-brewed character to all coffee flavors and will lend deep, dark notes to brown flavors like chocolate, mocha, caramel and maple.

Natural occurrence: Apple, beer, coffee, peanut, raspberry, sesame, tobacco and rum. Synonym: vinyl guaiacol.

Odor: @ 30%. Warm, slightly smoky, spicy, clovelike, sweet and vanillinlike.

Taste: @ 1 ppm. Warm, sweet, clovelike and slightly vanillinlike.

Taste: @ 2 ppm. Warm, spicy, sweet, slightly smoky and numbing with a vanillinlike undertone.

Possible applications: The spicy, smoky profile of this chemical will fit nicely into Indonesian vanilla-type flavors, as well as cured meats like ham, sausage, bacon and jerky. Other flavors where it will add character are barbeque, clove, cinnamon, coffee, mints, “red hots” and dark chocolate.

Possible applications: Brown, dried fruit flavors like prune, raisin, cranberry and tamarind are good applications for this extract as well as tropicals like guava, kiwi and passion fruit. It will also fit very nicely in tea, molasses and herbal flavors like horehound.
