Organoleptic Characteristics of Flavor Materials: July 2015

In this monthly column, senior flavorist Judith Michalski describes the odor, taste and suggested applications for several materials.

For example, ethyl-2-methyl pentanoate from Sigma Aldrich, FEMA# 3488, CAS# 39255-32-8 occurs naturally in red clover, plum and wine. Its odor at 100% exhibits a sweet, fruity, fresh, apple-like, slightly green and slightly waxy, with a hint of cheese. Possible applications include fruit flavors are the prime target of this ester. Its sweet ripe profile will benefit cider-type and fruit flavors like apple, pear, strawberry, blueberry, melon, pineapple, mango and papaya. At low levels it will also fit into the fruity complex of aged cheeses like Parmesan.
