DD Williamson Develops Acid-proof, Caramelized Sugar Flavor

DD Williamson (Louisville, Kentucky) has introduced an acid-proof, caramelized sugar flavor—a non-GM product which provides the characteristic flavor of burnt sugar, offers stability in phosphoric acid, citric acid, alcohol (60%) and salt (15%), and has incidental coloring properties. Of the new product, Greg Kreder, product development scientist, said, “Class one (plain) caramel colors and burnt sugars are not typically stable in acidic beverages …” The ingredient can be labeled as “natural flavouring” in the European Union and “natural flavor” in the United States.
