Researchers at Symrise (Holzminden, Germany) have developed SymStixx, a patent-pending analytical tool for the quick development of flavor profiles. The glass device, sheathed in a coating, is a few centimeters long and a several millimeters thick. Its sensitive GC/MS system compares analyses from food samples against a database of compounds using specialized software. The tool is capable of handling active flavoring components in complex foods with high levels of water, protein, sugar and fat, and is ideal for the assessment of meat, vanilla and mint flavorings.

Of the new tool, Gerhard Krammer, senior vice president, global flavor innovations, Symrise, said, “Our constant goal is to develop natural, label-friendly flavorings that resemble their culinary archetype as much as possible.”
