Symrise (Holzminden, Germany) has debuted a range of new grilling sauces to enhance the flavors of meat, seafood and vegetables. Developed by the company’s savory business unit, the focus was on three grilling-related applications: marinades and table sauces, mop sauces and premium finishing oils. According to Symrise product development chef Joe Scott, for the marinades and table sauces, ethnic and exotic flavors such as Moroccan tagine and Malaysian rempah are featured, while the mop sauces find influence from barbeque destinations such as St. Louis and the Carolinas, and the finishing oils offer sweet-and-spicy flavors associated with the Caribbean, Mediterranean and Chinese palettes. This new flavor range’s development was supported by research done by Symrise on the mingling of flavor with the grilling cooking technique, and consumers’ desire to introduce more flavor to these cooked-at-home offerings.
