This patent application describes 3,3'-dimethoxy-4,4'-dihydroxy stilbenes for developing a vanillin aroma, especially under the effects of light.

According to the inventors, 3,3'-dimethoxy-4,4'-dihydroxy stilbene (I) surprisingly was found to exhibit a vanilla-like smell and advantageous sensory properties. Furthermore, its vanilla aroma intensified under artificial sunlight; contact time in the range of 1 min to 60 min was sufficient to achieve a marked intensification. Longer exposure times could significantly increase its vanilla-like odor.

In addition, the patent describes compositions containing the 3,3'-dimethoxy-4,4'-dihydroxy stilbenes and an additional carrier material; to fragrance compositions and/or an odorant materials that contain the aforementioned compound; and to a method for providing or changing the aroma of compositions by adding the aforementioned compound. Applications include detergents, fabric care products, detergents, fragrance-containing hygiene products, air fresheners and perfumes.

Finally, a method for obtaining 3,3'-dimethoxy-4,4'-dihydroxy stilbenes from lignin-containing compositions is also disclosed.
