According to these inventors, some water-based liquid food systems do not provide sufficient solubility. This limits the amount of ingredient that can be added to a water-based system. Additionally, some flavor systems such as citrus can be unstable in low-pH, aqueous liquid food systems.

Provided here is a liquid system comprising a first and second component, different from one another, selected from: carbohydrates, sugar alcohols, food grade acids and food grade salts; and a non-aqueous solvent such as glycerin, propylene glycol or 1,3- propanediol.

The system has a specific melting point lower than each of its components and comprises 7% or less water. According to the inventors, the resulting systems are useful for protecting active ingredients in food systems, are stable at room temperature and retain their sensory properties after being diluted in aqueous beverages; for example, to form a flavored aqueous beverage.
