Featuring a creamy coconut, peach and apricot notes with coumarin undertones, Bedoukian Research Inc.'s Jasminone B (cyclopentanone, 2-(2E)-2-penten-l-yl; FEMA# 4284, CAS# 51608-18-5) can be used to add freshness and a fuzzy peach note to fruity fragrance accords. It is also used in beverages for its fresh peach and milky coconut flavor effects, as well as in bakery applications, and it can be used as a celery note at higher concentrations.
