Drawing on her passion for "perfumery and the sensorial experience," IFF perfumer Sophia Grojsman presented her creation, Pure Passion, during the American Society of Perfumers' "An Evening of Pairings," which recently took place at New York's Marriott Marquis hotel.

The event, hosted by sommelier Elizabeth Schneider (Wine for Normal People), included ingredient presentations from Bedoukian and IFF and fragrances from drom's Jean-Claude Delville and Givaudan's Natasha Cote. The evening's theme focused on the crossroads of food, wine, perfumery and aromatic ingredients via a series of culinary and organoleptic pairings.

Grojsman's scent was paired with the desert course, which comprised coconut dacquoise, pineapple mouse, grapefruit and pineapple compote, and rhubarb sorbet. The wine presented with the course was Vidal Blanc Ice Wine from Long Island, New York. The aromatic, sweet and acidic wine had notes of honeysuckle, peach, orange peel and more.

 

According to IFF, "Sophia was inspired by the dessert/ice wine pairing that showcased the synergy of indulgent creamy notes and crisp, vivid fruity nuances. Sophia's creation luxuriates in the juicy addiction of pineapple, blackcurrant buds and passion fruit, but then plays with tingling, bright sensations of [IFF's] Bergamal, geranium and neroli. The creation is colorful, addictive and radiates her endless energy, passion and unique (or timeless) vision."
