Upcoming SFC/CSA Meeting

On Wednesday, Sept. 24, the Society of Flavor Chemists will hold its 376th meeting at the Crowne Plaza Chicago O’Hare in Rosemont, IL. The agenda for the day includes SFC board of directors, committee and membership meetings in the morning. For attendees, the day kicks off with the lunch at 12:30 PM.

Following that, the Chemical Sources Association will hold its business and technical meeting, which includes an introduction by P&F magazine’s Kelly Frederick of the revised CSA Web site and a presentation by SAFC’s Dinh Phan on six new FEMA 23 materials.

The SFC education program begins at 3 PM with John Weaver’s (Kalsec Inc.) discussion on the role of spice extracts in commodity replacement. Weaver will provide insight on how extracts can be used to convert or replace the commodity ingredient while maintaining desirable attributes. His presentation will further highlight the key considerations when converting between ground and extract forms and how a cost savings may potentially be achieved. Richard Yoo (McDonald’s USA, LLC) will follow Weaver with a talk providing insights and thoughts on the world of food innovation, including noteworthy trends and examples of close in and breakthrough innovation.
