IFT 2008 Program Preview

The Institute of Food Technologists' 2008 Expo will take place June 29 to July 1 in New Orleans. In addition to its networking and new product introductions, the event will host a number of educational sessions, including:

  • Bridging the world of flavor chemistry and sensory science: Presenters will discuss analytics in flavor research and analysis, with a focus on flavor formation in cheese and dried dairy ingredients. Speakers will include Soo-Yeun Lee (University of Illinois, Urbana, IL), Wes Schilling (Mississippi State University, Mississippi State, MS),  Michael Qian (Oregon State University, Corvallis, OR) and Ray Marsili (Marsili Consulting Group, Rockford, IL).
  • Vanilla: Presenters will discuss fair trade issues, the regulatory issues behind vanilla's standard identity and vanillin produced via biotech. Speakers will include Rick Brownell (Virginia Dare), Daphna Havkin-Frenkel (Rutgers), Faith Belanger (Rutgers) and Chaim Frenkel (Rutgers).
  • Umami: A taste known throughout antiquity and a century of flavor discovery: Discovered 100 years ago, umami has only recently received press and media attention in the United States. This session serves to explore the taste characteristic's cultural and historical roots, as well as opportunities for product development. Speakers will include Robert Bursey (Ajinomoto), Andrew Ebert (The Kellen Co.) and Paul Rozin (University of Pennsylvania).
  • Changes proposed by Alcohol & Tobacco Tax & Trade Bureau (TTB) to nonbeverage alcohol product regulations and their effect on the flavor and beverage alcohol industries:  This topic has provided for some interesting differences of opinion in this forum. As TTB continues to reevaluate regulations and procedures for submitting formulas, the industry's stakes increase. Speakers include Janet Scalese (TTB) and Rachel Sanderoff (TTB).
